El Rubi is a lot from La Avila consisting of Bourbon and SL28 varietals. The lots unique terroir is due to significant red soil (clay) and nearly 100% shade, making this a special micro-climate that gives the coffee an amazing and sweet flavor.
The Ortiz family provides healthcare, food, and clothing to those in the community that are in need. Las Mercedes is heavily committed to ecological care on their farm and at the processing mill, making efforts to: 1) preserve natural wildlife, 2) maintain compliance with rigorous certifications in the way that the mill’s by-products are disposed of, and 3) avoid contamination from the mills waste water.
